A far cry from the finest bamboo shoots of the Anji Bamboo Forest, but an attempt at doing my best with what I had in stock: vacuum packed bamboo shoots and a recovered hunk of Jamón Ibérico.
I’d read it was a recommended substitute so just glad I finally got to use it (I suspect after that embarrassingly long time in the freezer it wouldn’t have been good for eating uncooked!). What a lovely three weeks in Seville that sounds!
